How to Make Rainbow Mochi Pancakes 🌈
Mochi, a Japanese rice dessert, is taking over kitchens by storm! Soft and chewy in nature, mochi can be incorporated into many different recipes, such as pancakes, to give them a unique spongy texture. For a fun and colorful summer twist that the kiddos are sure to love, make your pancakes rainbow colored. There’s no better breakfast than a stack of delicious, chewy pancakes!
Ingredients
Note: Makes 12 pancakes, two of each color (red, orange, yellow, green, blue, purple)
- 2¼ cups milk
- 3 eggs
- 1½ tsp. vanilla extract
- 1½ cup glutinous rice flour
- 1½ cup all-purpose flour
- 3 tsp. baking powder
- ¾ tsp. salt
- Food coloring
- Coconut oil or unsalted butter (for greasing pan)
Instructions for Making Rainbow Mochi Pancakes
Step one: Whisk together milk, eggs, and vanilla extract.
Step two: Mix together glutinous rice flour, all-purpose flour, baking powder, and salt.
Step three: Add the wet ingredients to the dry ingredients and whisk until combined.
Step four: Divide the batter into six bowls, one for each color of the rainbow. Add food coloring to each bowl until the batter reaches your desired color.
Step five: Grease your pan with a small amount of coconut oil or butter.
Step six: From each bowl, pour half of the batter onto the greased pan to form one pancake (each color should yield two pancakes). When bubbles form in the batter and the edges look solid, flip and cook the other side.
Step seven: Serve hot and enjoy them plain or with toppings of your choice!
