Mango lassi is a popular dessert drink in India made from mangos, yogurt, and spices. Today, we’re going to transform the delicious drink into pancakes! And what’s more, these pancakes are not limited to just breakfast—they also double as a delicious dessert! Just pair them with vanilla ice cream and some fresh diced mangos or strawberries.

What You Will Need
- 1 cup coconut milk
- 1½ cups mango puree
- 2 eggs
- 1½ cups flour
- 1 tbsp baking powder
- 1 tsp vanilla extract
- 1 tbsp butter (for the pan)
- Honey or syrup (optional)
- Fresh fruit (optional)
Instructions
Step 1: Whisk the coconut milk, mango puree, eggs, and vanilla extract until the mixture is smooth.
Step 2: Combine the flour and baking powder. Mix evenly.
Step 3: Add the flour mix in 4-5 batches, whisking each time to incorporate.
Step 4: Melt 1 tbsp butter in a non-stick pan. Pour 1/3 cup batter onto the pan and cook until small bubbles appear on the surface of the pancake.
Step 5: Flip pancake over and cook the other side.
Step 6: Serve with honey or syrup and some fresh fruit.
